On warm evenings at Spruce Peak, as the sun dips below Mansfield and the alpenglow fades, fireflies start to blink in the hillsides. With so little light pollution in this remote area, the stars are endless and impossibly bright.
A long wooden table adorned with glowing candles and hand-gathered wildflowers stretches across the Village Green as the murmur of laughter, chatter, and clinking glasses mingles with the sleepy hum of crickets and late-summer cicadas.
Welcome to Spruce Peak’s farm to table dinners. Each carefully curated menu spotlights a different local farm, showcasing the bounty of Vermont in a fantasy setting. Here, get a taste of what’s to come—and then grab your tickets at sprucepeak. com/farmtable.

Triple J Pastures
In 2018, John and Jen Belanger moved from the Boston area to Vermont’s Northeast Kingdom, with ambitions to put down roots and grow slow, nourishing food that works cohesively with the land. Now a family of four, the Belangers raise diverse livestock that is rotationally grazed on lush hillsides in a sustainable manner that promotes soil health. In the summertime, they run a farmstand selling meat, eggs, veggies, maple syrup, and freshly baked bagels—and also supply their home-grown ingredients to restaurants at the Lodge at Spruce Peak.
Knee Deep Farm
Knee Deep is a small family farm tucked right up against the Green Mountains in Jeffersonville. Owners Shane and Eliza Steffens seeded their first garlic crop in 2007 and now grow a diverse variety of certified organic vegetables, herbs, and flowers. They are committed to a holistic approach to farming, finding a balance between beautiful crops, healthy soil, animals big and tiny–as well as their family, growing business, and community.
